Sunny 95: 20 Outstanding Women Event

On Friday, January 18th, Sunny 95 will be celebrating 20 Outstanding Women at the Embassy Suites – Dublin from 5-8 pm. jC’s Sweet Ice Tea is proud to be a sponsor of this inspiring event! The event is a great opportunity to mingle and network with the outstanding women and other amazing area businesses. Festivities include complimentary samples and giveaways from local businesses.

Our owner/founder, Mrs. Jackie Chapman will be in attendance serving samples of her unique Southern-style tea. The event is free and open to the general public, so bring a friend to help us celebrate these outstanding women!

jC’s Brined Chicken Thighs

Hello, it’s Katie here again with another delicious recipe. This chicken, brined in a mixture of jC’s Sweet Ice Tea will make your mouth water! Here’s what I did:

First, gather your ingredients:

- One bottle (16 oz) jC’s Sweet Ice Tea
- 2 Tbsp brown sugar
- 2 Tbsp salt
- 1/2 Onion, thinly sliced
- 1/2 Lemon, thinly sliced
- 2 Garlic cloves, halved
- 1 sprig of rosemary
- 1 tsp fresh cracked pepper
- 2 lbs. chicken (I used thighs)

Next, boil 1 1/2 cups of water. Add jC’s Sweet Tea and bring it back to a boil, remove from heat as soon as you see the bubbles. Stir in the sugar and salt and then add the remaining ingredients (except the chicken!), stir well. Let the mixture cool for 1 hour.
After cooling, stir in a handful of ice, or refrigerate the mixture. You want it to be good and cold before you add the chicken. Once the mixture is cold combine it with the chicken in a large zipper bag.

Let this sit overnight, or at least 4 hours.

When you’re ready to cook, preheat the oven to 400 degrees. Drain the chicken and lightly coat with olive oil. Cook for 45 minutes, or until your meat thermometer reads 180 degrees. When you remove the chicken from the oven, be sure to let it sit for a few minutes (this is the hardest part because it smells so amazing!) because you want all the juices to soak back into the chicken meat. Et voila! It’s delicious alongside a root vegetable medley, a most amazing winter dinner!

Ingredients:

5. Remove chicken from mixture and drain. Lightly coat with olive oil and sit chicken in a roasting pan.
6. Cook for 45 minutes, or until a meat thermometer reads 180 degrees.

“Social Moms Around Columbus” Reviews jC’s

Bloggers from “Social Moms Around Columbus” (SMAC) recently tested jC’s Sweet Tea to review for their blog. They wrote a fantastic review of the tea after trying it both hot and cold. The ladies, Mona and Val, preferred the jC’s heated (and who can blame them with this cold snap of weather!) while Mona’s son preferred it cold and Val’s husband liked it both hot and cold. Val’s husband gave the flavor of jC’s a “gourmet” rating (we like this guy!), and the rest of the testers had great things to say as well. A big thank you to all of them for their great feedback! jC’s Homemade Applesauce

Even when served cold, homemade applesauce has a way of warming us up from the inside out. It’s a versatile staple in many cultures – it can be served for breakfast, as a side dish, as topping for potato pancakes or roast pork, served hot over ice cream for dessert, or countless other ways.

Hello fellow jC’s Fans, my name’s Katie, and I’ve got a fun recipe here for you.

I’ve loved applesauce for as long as I can remember, but I’ve never had applesauce as good as my Great Grandmother’s homemade cinnamon applesauce. It was always the perfect balance of sugar and spice, something I could appreciate, even as a 5 year old. So when I tasted jC’s Sweet Ice Tea for the first time, it was love at first taste – it reminded me of that perfect balance my Grandmother so artfully achieved. So, recently, I set out to achieve my own balanced applesauce, with the addition of jC’s Sweet Tea. And this is how I did it:

You’ll need four apples (may we suggest heading over to Clintonville Community Market, Weiland’s Gourmet Market, or any of the numerous local groceries where you can find local and organic apples), jC’s Sweet Ice Tea, sugar and cinnamon.

Peel, core and segment the apples. Add them to a medium sized saucepan.

Combine 1/2 cup of jC’s, 1 tbs of sugar, and 1/4 tsp cinnamon with the apples.

Cook over medium heat, covered, for 15 – 20 minutes.

Beware: the smell of your kitchen may make you drool… a lot.

Check for doneness by testing one apple slice with a fork. Just smoosh it.

When the apple slices smash easily, transfer to bowl and smash with fork or masher. If you like your applesauce pureed you can use an immersion blender or food processor.

If you can wait for it to cool, good for you. As for me, I had to have some hot off the stove, served with ice cream :)

That’s it! It takes 30 minutes, and only 4 ingredients. Enjoy!

  • 4 Apples, Peeled, Cored & Cut into chunks
  • 1/2 Cup jC’s Sweet Ice Tea
  • 1 Tbs Sugar
  • 1/4 Tsp Cinnamon
  1. Ready apples by peeling, coring and cutting into chunks.
  2. Combine apples in saucepan with sweet tea, sugar and cinnamon.
  3. Heat saucepan over medium heat, covered, for 15 – 20 minutes.
  4. Test a chunk of apple for doneness by smashing with a fork, it should be very soft and easily mashed. When apples have reached this point, remove from heat and mash with fork or masher. If you prefer smooth applesauce you may puree with blender or food processor.
